Homemade Cherry Pie with NO SUGAR ADDED! YUM!
I know what your thinking…no sugar? How can it be good? Trust me, you will never miss the sugar AND you will feel good giving this to your kids! This is my mother-in-laws recipe and I have made it many times over the years. It is error proof and really fresh and delicious. The crust is very flakey and light. If you try it, let me know how you like it!
No Sugar Cherry Pie
36 ounces frozen red unsweet cherries (thaw and drain)
1 cup undiluted cherry blend frozen juice concentrate
3 1/2 tbsp corn starch
1/2 cup honey
1 tsp almond flavor
Put thawed and drained cherries into saucepan and heat on low.
As they heat up, if they seem to get too juicy, drain a bit more juice off.
Add honey.
Blend a small amount of the cold juice concentrate (1/4 cup) with corn starch.
Add remaining juice concentrate to cherry mixture and heat to gentle boil.
Slowly add the blended juice/cornstarch mix to the cherry mixture and stir.
Continue to stir over low heat until the sauce thickens and for just a bit after that.
Remove from heat and stir in the almond flavor.
Pour into unbaked 9 in pie crust.
Bake at 350 for 45 mins.
Sometimes it runs over, so put on cookie sheet to avoid messes.
PIE CRUST:
1 1/3 cup whole wheat pastry flour
1 1/3 cup unbleached white flour
6 tbsp butter
6 tbsp oil
4 tbsp ice water
Measure flour into med size bowl. Add butter and cut into flour with fork. Add oil and mix until dough looks crumbly. Add ice water a little at a time and mix until you can gather the dough into a ball. Divide dough into 2 pieces and shape each into a ball. Roll dough between pieces of wax paper into 12 inch circle. Fit bottom of 9 in pie plate, add filling, add top crust.
NOTE: It sets up best if you refrigerate it before serving (about 30-60 mins).
