Weight Watchers Crustless Pumpkin Pie

This recipe is FANTASTIC!  It is only 1 point per serving…yep, you can eat and ENTIRE pie for only 8 points!  It tastes exactly like regular pumkin pie, minus the crust.  Trust me, you will never miss the crust!

Crustless Pumpkin Pie (1/8 of pie is 1 point if you use Splenda, 2 points if you use Brown Sugar)

15 oz can pumpkin

1/2 tsp salt

12 oz can evaporated skim milk

2/3 cup splenda OR 1/2 cup brown sugar

1 tbsp pumpkin pie spice

1 tsp vanilla

2/3 cup egg substitute OR egg whites

Mix all ingredients together until well blended.  Spray 9″ pie pan with Pam, pour in filling and bake at 400 for 15 min.  Turn down to 325 and bake another 40-45 min longer.
